Cornicabra is a variety of local olives from Toledo and is characterised by its great organoleptic qualities.
To preserve its antioxidants and high polyphenol content it is necessary to harvest early in the morning and mill daily. As a result, the oil possesses green fruit, freshly cut grass and tomato plant aromas.
Ideal for raw use in dressings, creams, pastas and rice dishes. Recommended for use in sautés, stews, meats and game dishes.
The Cornicabra Extra Virgin Olive Oil comes from a century-old olive grove, whose farmers are a young couple, Guillermo and Laura.
In 2013 they decided to recover the use of the family olive grove located in Arcicóllar, Toledo, and started producing their own oil. The olive trees were tended by their great-grandfather and some of those trees are over 300 years old.
Their philosophy is based on organic cultivation, but beyond certification, they are committed to recovering the balance of the ecosystem and the biodiversity.
The oil is produced from olives of 1,400 centenary olive trees distributed on different farms in Arcicóllar, Toledo.
Above all, Guillermo and Laura believe in the quality of the fruit. To preserve the aromas and the flavour of the olives harvested when green, they tend to the entire process in an exquisite manner.
Tasting Notes
A potent organic extra virgin olive oil.
On the bouquet it has a very young fruity aroma of green leaf, tomato, green almond and banana peel, likewise very fresh.
On the palate, herbaceous nuances can be perceived, highlighting the freshness of the artichoke.
It has a pleasant spiciness perceivable in the throat and a balanced bitterness with a prudent astringency which is reminiscent of nettle and other green stalks.
It is an intense juice, very persistent on the bouquet and structurally very balanced.
